About Our Foie Gras
Our foie gras has a rich, smooth, almost nutty in flavor, it can be prepared in a myriad of ways -- from classic torchon to terrines, pates, and mousse, seared, sauteed, served with pasta or as an accompaniment to other proteins, such as steak.
What makes the taste and texture of our foie gras superior to ducks raised on large farms is we’re able to focus on hand raising small-batches that allow the ducks to live outdoors in a natural environment. This approach provides a far superior yield, rendering considerably less fat when seared or sauteed.
Shipping
All Foie sold by Au Bon Canard online are frozen, cryovac sealed, and shipped in styrofoam containers packed with frozen gel packs, permitting your order to travel safely for 2-3 days. Because of the small nature of our operation and our remote location, all shipments leave the farm on Mondays only, for all orders placed before noon CT on Friday.
